Ingredients

Dry ingredients

  • 1 tsp. baking soda
  • 3/4 cup sugar
  • 1-1/3 cup gluten-free flour

Wet ingredients

  • 1/4 cup butter
  • 2 eggs
  • 1/3 cup orange zest
  • 1 cup coconut milk
  • 1/2 cup orange juice
  • 1/2 tsp. orange extract

Orange glaze

  • 1 cup powdered sugar
  • 2 Tbsp. orange juice

Instructions

  • In large bowl, add wet ingredients and whisk until well combined. Fold in orange zest until well combined.
  • In medium bowl, combine dry ingredients.
  • Add dry ingredients to wet ingredients and mix until batter is well combined.
  • Using cookie scoop, fill each muffin cup evenly with batter.
  • Preheat oven to 350 degrees F. and spray muffin pan with oil.
  • Bake for 15 minutes or until toothpick comes out clean. Allow muffins to cool.
  • In small bowl add orange glaze ingredients and mix until thick consistency forms.
  • Spread orange glaze over muffins and sprinkle orange zest on top.
  • Serve at room temperature and store in airtight container for 2-3 days.
